1 3/4 cups flour
4 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 1/4 cups water
2 teaspoons vanilla
1/2 cup of mashed bananas
2 eggs
3 tablespoons coconut oil
1/2 teaspoon fine salt (1/4 if using salted butter)
1. In a bowl, combine flour, baking powder, baking soda, and salt.
2. In a separate bowl, mix eggs, sugar, vanilla, water, oil, and mashed bananas. Pour into the dry ingredients and mix until well combined. (TIP: DON’T over mix, the mixture should be thick and lumpy).
3. Warm skillet to medium heat, melt 2 Tbsp butter , and pour batter into desired size (TIP: Lower temperature if outside cooks faster than inside).
5. Once the batter begins to bubble the pancakes are ready to be flipped. Cook until the center is cooked through.
6. Repeat with the remaining batter.
